Slow-Braised Guinness Beef with Spring Aromatics

Prep time:20 mins | Cook time: 3–4 hours (until 205°F for shredding)

Ingredients

  • 3–4 lb Beef Chuck Roast (best for slow braising)
  • 1 can (440ml) Guinness Draught 
  • 2 cups Beef Bone Broth
  • 4 large carrots (thick chunks)
  • 1 lb yellow potatoes (halved) 
  • 2 stalks of celery (thick chunks)
  • 1 large yellow onion (thick chunks)
  • 3 cloves smashed garlic
  • 2 bay leaves
  • 1 tbsp tomato paste
  • 3 sprigs of fresh thyme 
  • 1 sprig of rosemary

Instructions

  1. The Sear: In a large Dutch oven, sear all sides in a splash of oil until a deep brown crust forms. Remove the beef, set it aside, and season the seared beef generously with salt and pepper.
  2. Sauté: Add the onions and celery to the pot, cooking until softened. Stir in the tomato paste and garlic for 1 minute until fragrant.
  3. Deglaze: Pour in the Guinness, scraping the bottom of the pot to release all those flavorful brown bits (the “fond”).
  4. The Braise: Return the beef to the pot. Add the broth, bay leaves, and fresh herbs. The liquid should come about halfway up the side of the beef.
  5. Set the Tech: Insert your BFOUR Wireless Probe into the center of the roast. Set your app to monitor for 205°F (96°C). This higher temperature is the “sweet spot” where connective tissue breaks down into melt-in-your-mouth perfection.
  6. Low & Slow: Cover and place in a 325°F (163°C) oven. Add the potatoes and carrots during the last hour of cooking so they don’t get too mushy.
  7. Finish: Once the app hits the target, let the meat rest in its juices for 20 minutes before serving.
