Now that the windows are staying open, you want to keep the fresh air in and the “locals” (bugs) out.

Additionally, inspect the caulking around window frames; winter expansion and contraction often cause seals to crack. * The Home Hardware in both Flesherton & Durham does a great job of replacing torn or damaged screens in frames.

The “May Garden” Balsamic Roasted Chicken & Rhubarb
Most people only use rhubarb for pies, but its natural tartness acts like a “lemon” when paired with savory proteins. It cuts through the richness of the chicken perfectly.
Prep time: 15 mins | Cook time: 30 mins | Serves: 4
Ingredients
4 Skin-on, bone-in chicken thighs (or breasts)
2 cups Fresh rhubarb, sliced into 1-inch pieces
1/2 cup Red onion, sliced into wedges
3 tbsp Balsamic vinegar (the good, syrupy kind)
2 tbsp Honey or maple syrup
1 tbsp Fresh thyme (or rosemary)
2 tbsp Olive oil
Salt & Pepper to taste
Optional: A handful of fresh arugula for serving
Instructions
- Prep the Sauce: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, and half of the fresh thyme.
- Sear the Chicken: In an oven-proof skillet over medium-high heat, sear the chicken skin-side down for 5–7 minutes until the skin is golden and crispy. Flip the chicken over.
- Toss the Veg: Scatter the rhubarb pieces and red onion wedges around the chicken in the skillet.
- Glaze: Pour the balsamic-honey mixture over everything, making sure the chicken and rhubarb are well-coated.
- Roast: Place the skillet in a preheated oven at 400°F (200°C) for 15–20 minutes, or until the chicken is cooked through and the rhubarb has softened into a jam-like consistency.
- Rest and Serve: Let the chicken rest for 5 minutes. Serve it over a bed of fresh arugula, spooning the warm rhubarb and balsamic juices over the top.
